Ingredients for 2 servings:
- 300 g spruce tips
- 200 g dandelion flowers
- 10 leaves of wild mint
- 20 leaves of lemon balm
- Coconut blossom sugar or cane sugar, quantity see preparation
- 4 tsp sugar

Chop the spruce tips, mint, and lemon balm; for dandelions, use only the yellow part of the blossoms, which is best harvested in the midday sun when they are open. Wash everything and then add it to the pot. Add enough water to lightly cover the green parts. Simmer, covered, for about 15 minutes. The herbs will begin to “breathe.” Drain as soon as they turn light brown. Measure the drained liquid and add sugar (2:1). Add coconut sugar if you prefer it sweeter, or cane sugar if you prefer it sweeter. Bring back to a boil, dropping a sample onto a plate after every 15 minutes of cooking time to check the consistency when cold. Meanwhile, prepare the jars for storage. Once the consistency is right, pour it into the prepared jars while still hot, then let it cool. Store or give as a gift; thanks to its sugar content, the spruce and dandelion honey will keep for several months.
