Strawberry jam without gelling sugar

Ingredients for 1 servings:

  • 1 kg strawberries
  • 900 g sugar
  • 1 cup water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and halve the strawberries. Quarter large ones. Make a simple syrup from the sugar and water, i.e., mix the two together and cook until the mixture becomes thick (takes about 5 minutes). Stir frequently! Then add the fruit and cook, stirring constantly, until the mixture sets. Depending on the water content of the fruit, this can take up to 20 minutes. When the mixture bubbles like lava, test for settling by pouring a little jam onto a small plate and chilling briefly. If the mixture sets quickly, the jam is ready. Pour hot into prepared jars and cover with cellophane wrap soaked in schnapps (cherry, mirabelle, pear, or plum schnapps are good). Screw on the lid immediately. Note: Strawberry, apricot, and raspberry jam can be made without gelling sugar or pectin. This is a bit more time-consuming, but worth it. The jam tastes fruitier, its consistency is more pleasant and it retains its fruity taste and, above all, its color for a long time.
