Slice the onions and shallots into half rings. Slice the leek. Sauté everything in olive oil or butter and caramelize with a little brown sugar. Season with star anise, turmeric, cinnamon, salt, and pepper, and mix with chutney. It also works without chutney; just add a little chili. After cooking for a short time, remove everything from the heat and let cool. Whisk the crème fraîche and eggs and season with salt, pepper, and nutmeg. Place the pizza dough in a baking dish, top with the onion mixture, spread the egg mixture evenly over the dough, and sprinkle with grated cheese. Bake the onion tart in a preheated oven at 200°C for about 30 minutes.
