Ingredients for 5 servings:
- ¾ liter vegetable broth
- 125 g whipped cream
- 1 tbsp cornstarch
- 3 egg yolks
- 200 ml white wine (Silvaner)
- some crème fraîche
Instructions

Bring the broth to a boil in a saucepan with half of the cream and the wine. Whisk the cornstarch with a little water until smooth, add to the soup, and bring back to a boil. Mix the egg yolk with the remaining cream, add a little of the soup, and stir everything into the soup. Do not let it boil any further. Season to taste and serve.
