Ingredients for 4 servings:

  • 1 cube of yeast
  • 200 ml milk, lukewarm
  • 500 g flour
  • 75 g margarine
  • 50 g sugar
  • 1 egg(s)
  • 1 pinch of salt
  • 75 g margarine
  • 125 g sugar – cinnamon – mixture

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Dissolve the yeast in the lukewarm milk and then mix it with the remaining dough ingredients. Let the dough rest for 30 minutes at 40°C, then knead it thoroughly and let it rest for another 20 minutes at the same temperature. Next, roll out the dough to approximately 40 x 60 cm, spread with margarine, and sprinkle with the sugar and cinnamon mixture (you can use more or less cinnamon depending on your preference). Roll out the dough and cut into approximately 2 cm wide slices. Press down onto the narrow edge from the top with a wooden spoon. This gives the Franzbrötchen their typical shape. Now let the Franzbrötchen rest for another 15 minutes at 40°C. Then bake for 15-20 minutes at 150°C fan-assisted oven or 170°C top/bottom heat.
