You can freeze kohlrabi raw or blanched. In any case, you should have washed, peeled, and cut the tuber before freezing. If you don’t do this, you won’t be able to cut the frozen kohlrabi later. Even thawed whole kohlrabi can no longer be processed so easily.

  • If you have washed, peeled, and cut the kohlrabi into sticks or slices, you can blanch them before freezing. To blanch, place the vegetables in boiling water for a few minutes and then in ice water.
  • You can freeze the cooled vegetables in airtight plastic containers or freezer bags.
  • Fresh kohlrabi can be stored in the freezer for up to twelve months. If the kohlrabi has already been used in a meal, you should not keep the leftovers frozen for longer than two months.
