Freeze fresh savoy cabbage – that’s how it works
In addition to kale, savoy cabbage is also a popular autumn and winter vegetable. When you freeze savoy cabbage, you give the cabbage a longer shelf life so you can thaw it and enjoy it at a later time. In general, you have two options. Either you freeze fresh savoy cabbage, or you have already cooked the cabbage and put the rest in the freezer.
- If you want to freeze fresh savoy cabbage, you should separate the cabbage into its individual leaves and wash them thoroughly. Then put the savoy cabbage in boiling salted water for a maximum of three minutes.
- Tip: The lower leaves of the savoy usually have less bitter substances than the upper ones. For a fine taste, you should possibly not use the first layer of leaves.
- After you have blanched the savoy cabbage, rinse the cabbage with cold water. The reason for this procedure: Not only is the green color retained during freezing, but also the nutrients. In addition, bitter substances escape, which makes the cabbage more digestible when it is thawed again.
- Dry the leaves carefully with kitchen paper and put them in a freezer bag – whole or cut into small pieces.
- Alternatively, the cabbage can also be frozen in plastic containers. You can store savoy cabbage in the freezer for up to a year.
- If you want to freeze without plastic, you can use sealed storage jars, for example.
- Important: If you freeze fresh savoy cabbage, you should do so as soon as possible after harvesting or purchasing. If the leaves are withered, the quality of the cabbage decreases.
Freeze cooked savoy
If you have already processed the savoy cabbage, for example into a delicious savoy cabbage vegetable as a side dish, you can freeze it without any problems.
- If the savoy is already cooked or boiled, you should let it cool down. After cooling, fill the vegetables promptly in a sealable plastic container or freezer bag.
- Savoy cabbage that has already been processed can be stored in the freezer for about three months.
- When defrosting, you should gently defrost the savoy cabbage in the refrigerator, regardless of whether it is freshly frozen or already processed. Alternatively, you can slowly heat chopped savoy cabbage in a saucepan with a little water.
