French lavender lemonade

Ingredients for 1 servings:

  • 1,250 ml water
  • 300 g sugar
  • ¼ cup lavender, coarsely chopped
  • 125 ml lemon juice, freshly squeezed
  • Ice cubes, as desired
  • 6 lavender flowers

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

The day before, bring 750 ml of water and sugar to a boil in a saucepan. Stir until the sugar has dissolved. Add the lavender and remove from the heat. Cover and let the tea cool at room temperature. Once cooled, strain through a sieve. Pour the tea into a glass pitcher and top up with the remaining water and lemon juice. Stir well, season to taste, and add sugar if desired. Chill thoroughly in the refrigerator. Just before serving, stir the lemonade again and add ice cubes to the pitcher. To serve, pour into chilled glasses and garnish each glass with a lavender blossom.
