French onion soup

Ingredients for 4 servings:

  • 1 kg onion(s)
  • 100 g butter
  • 1 ½ liters of meat broth
  • 125 g white bread sticks
  • 2 glasses of wine, white, dry
  • 1 clove(s) garlic
  • 125 g cheese (Emmental)
  • 1 tbsp olive oil
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel and thinly slice the onions. Heat the butter in a saucepan and sauté the onions for 20-30 minutes, stirring frequently, until golden brown. Add the hot meat broth, season with salt and pepper, and simmer gently for another 20-30 minutes. Add the wine during the last 5 minutes. Season with salt and pepper to taste. Toast the slices of white bread and rub them with a sliced ​​garlic clove. Ladle the soup into ovenproof bowls. Place the slices of white bread on top, sprinkle everything thickly with grated cheese, and drizzle with a few drops of olive oil. Bake in a hot oven or broil until the cheese melts and turns light brown.
