Ingredients for 4 servings:

  • 6 large onions
  • 100 g butter
  • 500 ml white wine
  • 1 tbsp flour
  • 1 shot of cognac
  • 1 ½ liters of water or broth
  • pepper
  • Salt
  • White bread, toasted
  • 100 g cheese (Emmental or Gruyère), grated

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and thinly slice the onions. Place butter in a saucepan and sauté the sliced ​​onions. Season the onions with salt and flour. Then deglaze with cognac and white wine. Add water, cover, and simmer over medium heat (approx. 150°C) for about 20 minutes. Ladle into bowls and season lightly with pepper. Top with slices of white bread and sprinkle with cheese.
