Ingredients for 4 servings:
- 6 large onions
- 100 g butter
- 500 ml white wine
- 1 tbsp flour
- 1 shot of cognac
- 1 ½ liters of water or broth
- pepper
- Salt
- White bread, toasted
- 100 g cheese (Emmental or Gruyère), grated
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Peel and thinly slice the onions. Place butter in a saucepan and sauté the sliced onions. Season the onions with salt and flour. Then deglaze with cognac and white wine. Add water, cover, and simmer over medium heat (approx. 150°C) for about 20 minutes. Ladle into bowls and season lightly with pepper. Top with slices of white bread and sprinkle with cheese.
