French Potato Soup

The perfect french potato soup recipe with a picture and simple step-by-step instructions.

  • 500 g Potatoes
  • 3 Pc. Carrots
  • 2 Pc. Leek sticks
  • 30 g Butter
  • 1,5 liter Vegetable broth
  • 150 ml Milk
  • 0,5 bunch Parsely
  • 1 Teaspoon (level) Sugar
  • Salt and pepper
  1. Peel the potatoes and carrots, wash the leeks. Cut the potatoes, carrots and leeks into small pieces. Melt the butter in a large saucepan over medium heat. Add the carrots and leeks, simmer until soft. Add the potatoes and let them simmer. Add the vegetable stock, Add sugar, salt and pepper and let simmer for about 30-40 minutes. Lightly puree the soup with a hand blender, add the milk. Wash and roughly chop the parsley, add to the soup and serve.
