Fresh artichokes with lemon mayonnaise

Ingredients for 2 servings:

  • 1 large artichoke(s)
  • 1 lemon(s)
  • 1 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 clove(s) garlic

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Trim the artichoke stem and halve the artichokes with a sharp knife (preferably a serrated knife), cutting off the top tips. Using a tablespoon, remove the inner leaves, including the straw. Immediately brush the cut surfaces with lemon juice, otherwise they will brown immediately. In the meantime, bring a pot with plenty of water to a boil. Cook the artichokes with salt and lemon juice for 20-30 minutes. They are ready as soon as a leaf comes away without much resistance. In the meantime, mix the mayonnaise with sour cream, garlic, lemon zest, a little lemon juice, salt, and pepper. Serve the artichokes. To eat, pull individual leaves from the artichoke and dip them in the mayonnaise. Serve with a fresh baguette.
