Fresh pasta dish with lemon and Parmesan

Ingredients for 2 servings:

  • 2 servings of pasta
  • 1 handful of fresh basil
  • 2 tomatoes or cocktail tomatoes
  • 10 green olives
  • 3 cloves garlic
  • 1 lemon(s), juice
  • Parmesan, fresh
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil salted water for the pasta and add the garlic cloves, skins included. When it’s boiling, add the pasta. Meanwhile, dice the tomatoes (halve or quarter cocktail tomatoes) and quarter the olives. Drain the pasta and return it to the pot (off the stove). Peel and crush the garlic cloves, and add them to the pasta. Add the tomatoes and olive pieces (along with any juice that runs out as they’re cut). Squeeze over the juice of one lemon, and finally add the basil leaves. Stir everything well, season well with salt and pepper, and serve with plenty of Parmesan cheese. Serve with a delicious salad.
