Fresh pea soup

Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 200 g cooked ham or salmon ham
  • 50 g butter
  • 1,000 g peas, frozen, not thawed
  • 1 ½ tsp sugar
  • 1 liter of broth
  • 250 g whipped cream
  • 4 tsp cornstarch, level
  • 1 lemon(s), the juice
  • Salt
  • Pepper, white
  • Parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the peeled onions. Cut the ham into thin strips. Melt the fat in a large pot and sauté the onion until translucent. Add the peas, sugar, and broth and simmer over medium heat for 20 minutes. Mix the cream with the cornstarch and add to the soup. Bring to a boil briefly and season with lemon juice, salt, and white pepper. Garnish with parsley. We like this best with toasted flûte rolls.
