Ingredients for 4 servings:
- 1 celeriac
- 2 carrots
- 2 stalk(s) leeks
- 1 bunch of spring onions
- 1 pack of green beans
- 750 g soup meat
- 2 packs of dumplings (marrow dumplings)
- 1 large sweet potato(s)
- 1 vegetable onion(s)
- salt and pepper
- lovage
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Soup as a process or simply for in between
First, put the meat in a large pot of cold water. Bring to a boil and simmer for about 2 hours. (Just like dumplings.) Meanwhile, clean and chop the vegetables (whether you dice them, cut them into rings, etc. is up to you). After 2 hours, remove the meat from the bones and cut it into bite-sized pieces. Return the meat to the broth and add the vegetables and marrow dumplings. Simmer everything for another 30 minutes. Season with salt, lovage, and pepper.
