Fresh tomato salsa "Pico de Gallo"

Ingredients for 1 servings:

  • 250 g cherry tomatoes or home-grown tomatoes
  • ½ tsp salt
  • ½ m.-sized onion(s)
  • ½ Jalapeño(s), fresh, pitted and finely diced
  • 7 ½ g coriander leaves, finely chopped
  • 1 tbsp lime juice, freshly squeezed

Instructions

Working time approx. 10 minutes; Rest time approx. 40 minutes; Total time approx. 50 minutes

great with guacamole and tortilla chips

Quarter the cherry tomatoes and cut into small cubes. Season with salt and let them drain in a colander for 10 minutes. In a bowl, toss the drained tomatoes with the onion, jalapeño, cilantro, and lime juice. Season to taste with salt and a little more lime juice, if desired. Let it sit in the refrigerator for at least 30 minutes. Serve with guacamole and tortilla chips. This recipe uses cherry tomatoes because I find they are the most flavorful when grown outside of your own garden. However, tomatoes from your own garden are always preferable!
