Fresh tortellini salad with balsamic vinaigrette

Ingredients for 4 servings:

  • 1 package of tortellini (cheese tortellini or spinach tortellini)
  • 1 bunch of spring onions
  • 1 bowl of cocktail tomatoes
  • 1 cup mini mozzarella
  • Balsamic vinegar
  • olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, cook the tortellini according to the package instructions and let it cool. Wash the spring onions and slice them into rings. Wash the tomatoes and halve them. Drain the mozzarella balls and halve them. Mix 3 tablespoons of olive oil and 2 tablespoons of balsamic vinegar with a little salt and pepper to make a vinaigrette. Add the other ingredients and mix well. The salad tastes best after letting it sit in the refrigerator for a day.
