Ingredients for 8 servings:
- 600 g tuna from the can
- 400 g cream cheese
- 1 m.-sized onion(s)
- ½ cucumber(s)
- 1 bunch of parsley
- some chives
- 1 dashes lemon juice
- 1 clove(s) garlic
- 4 peppers, pickled
- 16 thin wrap(s) or durum (diameter approx. 20 cm)
- salt and pepper
- 150 g lettuce or salad mix
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Peel and finely chop the garlic. Finely dice the onion. Rinse the parsley, pluck the leaves, and roughly chop them. Rinse the chives and finely chop them. Mix these ingredients well with the cream cheese. Drain the tuna and add it roughly diced. Cut the peppers into fine strips and add them. Peel and halve the cucumber, remove the seeds with a teaspoon, then cut the cucumber into 1/4-inch cubes and mix in. Mix all ingredients well, but do not completely chop the tuna. Season to taste with lemon juice, salt, and pepper. Add other herbs or spices to taste. The mixture can also be flavored with sugar, remoulade, etc. Briefly heat the tortillas or durum and let them cool again, or use them cold (for my taste, they sometimes have too much yeast/flour flavor when used cold, which is mellowed after a brief warming – ideally in the oven). Spread each wrap generously with 2-3 tablespoons of the tuna cream and arrange a few lettuce leaves on top. Roll them up tightly and place them seam-down on a plate. The rolls can be eaten immediately, but they also tolerate chilling in the refrigerator for a few hours, or even up to a day. This will soften the dough a bit, but the filling will be even more flavorful. To serve, carefully cut the wraps into rings with a sharp knife and arrange as desired. Note: This is a recipe I improvised on the fly. The number of people served is an estimate and should not be taken too seriously (it varies greatly depending on hunger and whether the dish is being served as an appetizer, main course, or finger food). There is certainly a lot of scope for the filling: you can let your creativity run wild here!
