Fried asparagus salad with peppers

Ingredients for 2 servings:

  • 10 stalk(s) asparagus, white
  • 2 thick bell peppers, red
  • 1 onion(s), red
  • 8 potatoes
  • 1 pinch(s) salt and pepper, white from the mill
  • 50 g sugar
  • 1 bunch parsley, fresh
  • some butter
  • 1 clove(s) garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the asparagus and cook gently with a little sugar, salt, and a knob of butter (about 6 minutes). Then peel the potatoes and slice them thinly. Halve the onion and then slice it into thin half rings. Fry the potatoes in olive oil and add the onions, seasoning with salt, pepper, and fresh garlic. Cut the asparagus diagonally into pieces about 2 cm long. Then fry the asparagus in oil and caramelize it with the remaining sugar. Then cut the bell pepper into thin strips and braise briefly. Place everything in a bowl, season with salt, pepper, vinegar, and olive oil, and serve with toasted baguette.
