Fried celery slice with herb breading

Ingredients for 2 servings:

  • 1 celeriac
  • 4 tbsp spelt flour
  • 1 egg(s)
  • 4 tbsp breadcrumbs
  • 2 tbsp, heaped clarified butter
  • ½ tsp sea salt
  • 1 tsp spice mix, Aglio & Olio
  • 1 tsp parsley, dried
  • ½ tsp black pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Generously trim the ends of the celery root, leaving a slice about five to six centimeters thick. Peel the root and then cut it into two equal celery slices, each 2.5 to 3 cm thick. Heat clarified butter over medium heat. Coat the slices in spelt flour, first dip them in beaten egg, then in breadcrumbs mixed with spices and herbs. Ensure the breading is complete. Place the celery slices directly into the hot fat and fry with the lid closed for about 12 minutes on each side. Baste the patties with the fat occasionally.
