Fried Chicken with Lime and Coriander Sauce

- 5 Pc. Chicken breasts
- Flour
- 0,25 tsp Salt
- 0,25 tsp Pepper
- 1 tbsp Olive oil
- 1,5 Cup Poultry stock
- 1,5 tbsp Lime juice
- 1,5 Pc. Fresh coriander
- 0,5 tsp Chilli from the mill
- 4 tbsp Whipped cream
- Lightly dust the chicken breast with flour.
- Warm up in a large pan with a little olive oil and butter. Sear the chicken breast on each side (1 minute per side) (add salt, pepper).
- Take the chicken breast out of the pan and place in a saucepan with a lid.
- Preheat the oven to 190 degrees Celsius.
- In the same pan, add the stock, onions, lime juice and coriander and cook until it is reduced to half a “cup”.
- Then add the cream and butter and wait until the butter has melted.
- Add the chicken breast back to the pan and place the pan with the sauce and chicken in the oven for about 5-10 minutes (until the chicken is cooked through).
- Option 8: Sprinkle feta cheese on top.
