Ingredients for 4 servings:

  • 1 onion(s)
  • 200 ml milk
  • 3 rolls from the day before
  • 2 eggs
  • 2 handfuls of raisins
  • salt and pepper
  • 1 tbsp chives
  • Breadcrumbs for consistency

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Peel and finely chop the onion, sauté, and deglaze with the milk. Tear the bread rolls into small pieces and soak them in the milk. Mix in the remaining ingredients and knead. Regarding the consistency: If I can build “walls” in my bowl without them running or sinking, the consistency is right. Form the dough into tubes and wrap them tightly, first in plastic wrap, then in aluminum foil. No water should penetrate. Cook the dumplings in a water bath for 40 minutes, then unwrap them, slice them, and fry briefly.
