Fried egg – tomato – snack

Ingredients for 2 servings:

  • 2 slice(s) bread(s), dark, thickly sliced
  • 2 small tomatoes
  • 2 eggs
  • 8 basil leaves
  • salt and pepper
  • olive oil
  • possibly balsamic vinegar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Quick and healthy snack for in between meals!

Halve the tomatoes, remove the stems, and cut them into eighths. Toast the bread if desired. Heat oil in a pan (a nonstick pan is best) and fry the fried eggs. About halfway through cooking, flip the eggs if necessary and add the tomato pieces to the pan alongside. Season both with salt and pepper and finish frying. Place the fried eggs on the bread, top with the basil leaves, and then arrange the warm tomatoes on top. If you like, drizzle a little balsamic vinegar over each piece of bread.
