Ingredients for 4 servings:

  • 4 egg yolks
  • 2 eggs
  • 1 pinch of sea salt
  • some panko or breadcrumbs
  • Frying fat or frying oil

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 2 minutes; Total time approx. 3 hours 12 minutes

Line 4 muffin cups with cling film and drop an egg yolk into each. Freeze the cups with the yolks. Remove the frozen egg yolks from the pan and season with sea salt. Whisk the two eggs and dip the frozen egg yolks in the egg yolks. Then coat them in Pako flour or white breadcrumbs. Repeat this process and double-coat the egg yolks. Meanwhile, heat the oil and deep-fry the egg yolks until golden brown. Serve with a salad or asparagus. The fried egg yolks can also be used as a soup garnish.
