Fried gnocchi with chard

Ingredients for 4 servings:

  • 1 kg potatoes, floury
  • 200 g flour
  • 1 egg(s)
  • 300 g chard
  • 75 g bacon, diced
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 1 tbsp olive oil
  • 1 dash of cream
  • salt and pepper
  • Fresh herbs, chopped, to taste

Instructions

Working time approx. 1 hour 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes

Gnocchi: Peel, boil, and mash the potatoes, then knead them into a dough with the flour and egg, then form gnocchi. Cook the gnocchi in salted water for a few minutes until they rise to the surface, drain, and keep warm. Wash and blanch the chard, let it cool briefly, squeeze dry, and cut into strips. Finely chop the onion and garlic. Sauté the bacon cubes, onion, and garlic in olive oil, fry the gnocchi, add the chard strips, season, finish with a dash of cream, and serve with fresh herbs.
