Ingredients for 4 servings:
- 8 slice(s) white bread, Italian, cut into thin slices
- breadcrumbs
- 2 eggs
- Oil for the pan
- 250g mozzarella

Whisk the eggs well in a plate. Transfer the breadcrumbs to another plate. Cut the mozzarella into thin slices and spread them on 4 slices of white bread, ensuring that the slices do not extend over the edges. Place the remaining slices of bread on top and let them soak in the egg for a good 5 minutes on each side, then coat them in the breadcrumbs. The bread should be well coated in the breadcrumb mixture. Heat the oil (enough for deep-frying) and fry the mozzarella breads until golden brown on both sides. Turning them over can take a bit of practice – even my Italian aunt still loses the occasional loaf. Place them on kitchen paper to absorb any excess oil. Tastes best hot! It might work in a deep fryer, too, but I haven’t tried it myself.
