Fried noodles with corn-fed chicken and peanuts

Ingredients for 4 servings:

  • 2 corn-fed chicken breasts
  • ½ cucumber(s)
  • 1 bell pepper(s), red
  • 1 chili pepper(s)
  • 1 stalk(s) leek
  • 1 clove(s) garlic
  • 100 g mushrooms (shitaki mushrooms)
  • 100 g soy sprouts
  • 1 bunch of coriander leaves
  • 1 package of Chinese egg noodles
  • 150 g peanuts, unsalted
  • salt and pepper
  • Soy sauce
  • Sesame oil, peanut oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the corn-fed chicken breast into strips, season with salt and pepper. Sear in the peanut oil. Drain on kitchen paper. Cook the egg noodles according to the package instructions, drain, and set aside. Thinly slice the bell pepper, chili, garlic, leek, and mushrooms. Sauté in sesame oil and deglaze with soy sauce. Add the noodles. Peel, deseed, and coarsely grate the cucumber. Chop the cilantro and coarsely chop the peanuts. Toss the cucumber, cilantro, bean sprouts, and peanuts together. Serve hot.
