Cut the turkey into strips and marinate overnight in 2 tablespoons of soy sauce. Cook the mie noodles until al dente. Brown the marinated turkey in hot oil, turning the noodles several times to brown them. Combine 2 tablespoons of soy sauce, the curry paste, and the sambal oelek and pour over the noodles. Add the remaining soy sauce and mix thoroughly. Now add the washed sprouts to the pan and let them simmer with the lid on for about 5 minutes. They should still retain some of their bite. The turkey can be replaced with chicken breast or crab.
