Ingredients for 2 servings:
- 250 g pasta
- 2 eggs
- 1 avocado(s)
- 2 spring onions
- 5 cocktail tomatoes
- 100 g sheep’s cheese
- Soy sauce
- herbal salt
- pepper
- chili powder
- some lemon juice
- n. B. chives
- 2 tbsp rapeseed oil
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Cook the pasta according to the package instructions and drain. Cut the tomatoes, avocado, and feta cheese into small pieces. Drizzle the avocado pieces with lemon juice. Slice the spring onions into rings and briefly sauté in oil in a pan. Crack in the eggs, season with a little herb salt, and mix. Once the egg mixture has set, add the noodles and fry for about 2-3 minutes. Deglaze with a little soy sauce and remove from the heat. Stir in the avocado, feta cheese, and tomatoes and season with pepper, salt, and chili. Sprinkle with chives and serve lukewarm.
