Fried noodles with vegetables and egg

Ingredients for 4 servings:

  • 500g spaghetti
  • Vegetable broth, instant
  • 5 garlic cloves
  • 2 large carrots
  • 1 small broccoli, cut into very small florets
  • 2 spring onions
  • 2 eggs
  • Soy sauce
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the noodles with a little broth. After 5 minutes of cooking, add the broccoli florets. In the meantime, chop the carrots into small strips, the spring onions into rings, and the garlic into small pieces. Heat a little oil in a pan and fry the garlic. Then add the carrots and spring onions. When the carrots are al dente, add the drained noodles and broccoli to the pan and fry. Add enough soy sauce until the noodles are lightly browned. You can use more if you like. Stir everything well and pour the eggs over the top. Stir again, and when the eggs are cooked, the meal is ready.
