Ingredients for 2 servings:

  • 700 g potatoes
  • 300 g vegetables (butter vegetables), frozen
  • 100 g cheese (Gouda or Edam), grated
  • Salt
  • pepper
  • Garlic

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Fried potatoes with vegetables

Peel and dice the potatoes. Brown them in a pan and then season to taste. Add the vegetables to the potatoes and cook, stirring frequently. When all the ingredients are hot, sprinkle the cheese on top. Close the lid and wait until the cheese has melted slightly. Stir once more to ensure the cheese is evenly distributed. If you like, you can also bake the potato and vegetable mixture in the oven. This recipe is perfect for using up leftovers, even with fresh vegetables or boiled potatoes. We often use up leftovers from raclette.
