Fried rice à la Sabi

Ingredients for 2 servings:

  • 200 g rice
  • 6 spring onions
  • 1 garlic clove(s)
  • 4 tbsp cashews
  • 4 eggs
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil, neutral
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Simple and vegetarian

Cook the rice in boiling water, then place it in a sieve and drain well. Meanwhile, slice the spring onions into rings, finely dice the garlic, and roughly chop the cashews. Heat 1 tablespoon of oil in a pan, then add the garlic and stir-fry until fragrant. Add the spring onions and cashews to the pan and continue to fry for about two minutes. Deglaze with 2 tablespoons of soy sauce and simmer briefly. Season well with pepper and remove from the heat. Place the eggs in a bowl with 1 tablespoon of soy sauce and a pinch of salt. Whisk everything well with a fork. Heat the remaining oil in another pan. First, fry the rice until it is slightly translucent. Then pour the beaten eggs over the rice and stir until set. Finally, stir the sautéed vegetables and soy sauce into the rice and fry briefly again.
