Ingredients for 1 servings:
- 3 eggs
- 1 tsp salt
- Black pepper, freshly ground
- 450 g wild rice, cooked or a mixture of wild and brown rice
- 225 g broccoli florets
- n. B. Spring onion(s), approx. 2 – 3, cut into rings
- 170 g Cheddar cheese, hot, grated
- Butter for frying
- Olive oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Whisk together eggs, salt, and pepper. Combine rice, broccoli, green onions, and cheese in a large bowl and stir in the egg mixture. Heat a large skillet over medium heat. Add equal parts (about 1 tablespoon each) olive oil and butter. Once the butter and oil mixture is warm, spoon about 1 1/2 tablespoons of rice mixture into the skillet and lightly press it into flat cakes. Cook the cakes on both sides. Healthy vegetable and cheese cakes. Serve the wild rice cakes with bacon or sausage for a hearty breakfast or for a light lunch or dinner.
