Ingredients for 4 servings:
- 2 egg yolks
- 1 egg(s)
- 2 vanilla pods, the pulp
- 60 g sugar
- 200 g cream, whipped until creamy
- 25 ml water
Instructions

Whisk the egg yolks, egg, vanilla seeds, and 20g of sugar in a bowl until light and fluffy. Combine the remaining sugar and 25ml of water in a saucepan and simmer until completely dissolved. Gradually whisk the hot sugar syrup into the fluffy egg yolk mixture. Continue beating the mixture in a hot water bath until thick and fluffy. Then immediately chill it in a cold water bath, ideally over ice water. Fold in the whipped cream. Spoon the parfait mixture into serving molds, cover, and freeze in the freezer for 4-5 hours.
