Fried rice with crab

Ingredients for 3 servings:

  • 200 g beans, green
  • salt water
  • 1 garlic clove(s)
  • 1 avocado(s)
  • 1 tbsp lemon juice
  • 3 tbsp oil (corn oil)
  • 50 g cashew nuts
  • 300 g Basmati, cooked
  • 200 g crab
  • 1 tbsp soy sauce
  • 1 pinch(s) of cayenne pepper
  • salt and pepper
  • some parsley

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash and trim the beans, and cut into approximately 5 cm long pieces. Cook in plenty of boiling salted water over high heat for 5 minutes. Chop the garlic. Halve the avocado and remove the pit. Peel the avocado in half, dice it, and toss it with the lemon juice to prevent the flesh from discoloring. Chop the parsley. Heat the oil in a deep pan or wok. Toast the nuts over medium heat until golden brown. Add the beans and garlic and fry over medium heat, stirring, for about 3 minutes. Fry the rice over high heat for 2 minutes. Mix in the avocado, shrimp, parsley, and soy sauce and heat everything through. Season with salt and pepper and serve immediately.
