Ingredients for 2 servings:

  • 150 g basmati rice
  • 1 tbsp rice vinegar
  • Salt
  • 12 m.-sized prawn(s), peeled or 200 g crab
  • 1 tbsp soy sauce
  • 1 tsp sambal
  • 1 garlic clove(s)
  • 100 g edamame or soybeans
  • 1 cucumber(s)
  • 100 g mango(s)
  • 100 g radishes
  • 1 tbsp, heaped mayonnaise
  • 1 tbsp soy sauce
  • 1 tsp sambal

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the rice and let it cool. Slice the cucumber, radish, and garlic. Heat a little oil in a pan or wok and stir-fry the shrimp for 3 minutes. Season the shrimp with soy sauce, sambal, and garlic. For the spicy mayonnaise, mix the mayonnaise, soy sauce, and sambal. Season the rice with rice vinegar and a pinch of salt. Assemble the poke bowl: Divide the rice, vegetables, mango, and shrimp between 2 plates. Add the spicy mayonnaise. For 2 servings, one serving has 360 calories.
