Fried small sardines

Ingredients for 4 servings:

  • 500 g sardines, small, (alternatively anchovies)
  • 2 lemons
  • salt and pepper
  • Flour, for turning
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the sardines and dry them with kitchen paper. Remove the heads. If the sardines are larger than about 8 cm, remove the bones. Wash the lemon in hot water and dry them. Finely grate the zest of one lemon and squeeze out the juice. Mix the juice with salt and pepper and drizzle it into the fish. Toss the outside of the fish in the lemon zest, then coat in flour. Shake off any excess flour. Heat oil in a pan. Deep-fry the fish for 3-4 minutes, turning occasionally, then drain on kitchen paper. Cut the remaining lemon into eighths and serve with the hot sardines.
