Ingredients for 2 servings:
- 250 g prawn(s), peeled, fresh
- 2 tbsp cornstarch
- ½ tsp salt
- ½ liter of milk
- 6 egg whites
- 1 slice(s) ham, cooked, cut into small pieces
- 2 tbsp lard, alternatively clarified butter or oil
- Flowers and cucumber fans as garnish
- ½ tsp sesame oil, dark
- 1 tsp salt
- 1 pinch(s) pepper, white
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Wash and devein the shrimp. Rub with cornstarch mixed with salt, then rinse thoroughly under cold running water. This will remove the fishy flavor and turn the shrimp completely white. Pour the milk into a bowl, add the lightly beaten egg whites and the ham cubes. Add the seasonings and mix well. Heat the fat in a wok or pan over moderate heat and gently fry the shrimp. As soon as they begin to change color, carefully remove them with a slotted spoon and set aside. Pour the milk and egg white mixture into the wok and cook gently, stirring. When the mixture begins to set, add the shrimp again and finish cooking, stirring very gently until the egg whites are completely set. Arrange on a serving platter and garnish with bright flowers and cucumber fans. The dish is said to evoke “treasures buried under snow.”
