Fried sugar snap peas

Ingredients for 4 servings:

  • 650 g sugar snap peas
  • 1 garlic clove(s)
  • 3 tbsp vegetable oil
  • 1 tbsp Soy sauce (Ketjap manis)
  • 2 tbsp soy sauce, light
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp glutamate, if needed
  • 1 ½ tsp potato flour / potato starch
  • 5 tbsp vegetable broth

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the snow peas and remove any strings. Then wash and blanch them in boiling water for about 1 minute. Remove the snow peas and drain. Peel and finely chop the garlic. Heat a wok, add oil, and fry the garlic. Add the blanched snow peas and fry briefly. Add both types of soy sauce, salt, sugar, and MSG (if desired), and stir while shaking the wok. Finally, thicken with a mixture of potato flour or potato starch and vegetable stock and bring to a boil briefly. Serve hot.
