Fried sweet dumplings with tomato and feta cream

Ingredients for 4 servings:

  • 4 pumpkin(s) (sweet dumpling pumpkins)
  • Olive oil, high heat
  • 250 g quark
  • 150 g feta cheese
  • 300 g tomatoes
  • 1 small onion(s), red
  • ½ bunch parsley
  • salt and pepper
  • Cream of balsamic vinegar for drizzling
  • Olive oil for drizzling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Wash the pumpkins and cut off large tops. Coat the pumpkins generously with oil, sprinkle with salt, and roast on a baking sheet in the oven at 200°C (top/bottom heat) for 45 minutes. Meanwhile, for the filling, mix the quark with finely chopped feta cheese, chopped tomatoes, onion, and parsley. Season with a little salt (because of the feta cheese) and pepper. To serve, carefully scoop out the seeds from the pumpkins with a spoon. Fill the pumpkins with the feta mixture. Serve drizzled with olive oil or balsamic vinegar. Serve with a mixed salad.
