Ingredients for 1 servings:

  • 375 g flour
  • 1 packet of yeast (dry yeast)
  • 50 g sugar
  • ½ lemon(s), the juice
  • 200 ml milk
  • 50 g butter
  • 1 egg yolk
  • 1 tsp honey
  • 2 apples, in pieces
  • 125 g fig(s) (soft), chopped
  • 100 g nuts, chopped or almonds
  • 1 tsp cinnamon
  • 2 egg whites
  • 50 g sugar

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Yeast wreath with apple, fig and nut filling

Sift flour into a bowl and knead with yeast, sugar, lemon juice, milk, and butter to form a smooth dough. Cover and let rise for about 1 hour. Roll out into a 40 x 30 cm rectangle. Whisk together the egg yolk and honey, then stir into the apples, figs, and almonds. Beat the egg whites until stiff, sprinkle with the sugar and cinnamon, and beat into a macaroon mixture. Fold into the apple mixture and spread the filling evenly over the dough. Carefully roll up from the short side and shape into a wreath. Let rise for another 30 minutes. Whisk the egg yolk with the milk and brush over the wreath. Then bake at 175°C for about 40 minutes.
