Fruity Asian Carrot Soup

- 1 kg Carrots
- 0,5 Can Coconut milk
- 250 ml Orange juice
- 750 ml Ready-Made vegetable broth
- 0,5 tsp Ginger puree
- 0,5 tsp Curry paste
- 0,5 tsp Lemongrass puree
- 1 Chopped onion
- 1 Garlic clove chopped
- Fry the onion and garlic in a little oil, peel the carrots, cut into slices, add to the onions, sauté and cook with a little water until they are soft. Add the orange juice and coconut milk and puree the whole thing. Gradually add the vegetable stock until the desired consistency is achieved. Bring the soup to the boil briefly and season with ginger, curry and lemongrass. Serve hot.
