Fruity couscous salad

Ingredients for 8 servings:

  • 500 g couscous
  • 1 liter orange juice
  • 1 pack of feta cheese or shepherd’s cheese, approx. 150 – 200 g
  • 1 small bell pepper(s)
  • 1 spring onion(s)
  • olive oil
  • salt and pepper
  • some parsley

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Place the couscous in a bowl, pour over the orange juice, and let it sit for at least half an hour to allow it to swell. Stir frequently. The couscous is ready when it’s soft. Add a little more water if needed to prevent it from becoming too dry. In the meantime, finely dice the bell pepper and feta. Finely slice the spring onions. Chop the parsley. Mix all ingredients with the couscous. Season with salt, pepper, and olive oil. The highlight of this salad isn’t just the flavor; the couscous doesn’t need to be cooked! It’s also easy to prepare the day before. 8 servings apply if it’s just a side dish!
