Fruity green spelt pastries

Ingredients for 1 servings:

  • 200 g dried fruit
  • 2 tbsp rum alternatively apple juice
  • 2 eggs
  • 75 g sugar
  • 100 g green spelt flour
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • 2 tbsp almonds, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Makes about 40 cookies, for one baking tray

Finely dice the fruit and mix with rum or apple juice. Beat the eggs and sugar until frothy. Mix in the spelt flour, baking powder, and cinnamon powder. Stir in the almonds and the diced fruit. Using 2 teaspoons, place hazelnut-sized heaps of dough onto a baking sheet lined with baking paper. Bake in a preheated oven at 180°C (top/bottom heat) or 160°C (fan oven) for approximately 15-20 minutes on the middle rack. Makes approximately 40 loaves.
