Fruity lentil curry

Ingredients for 6 servings:

  • 400 g lentils (mountain lentils), washed
  • 1 liter of water
  • 2 bay leaves
  • 75 g raisins
  • 1 orange(s), juice
  • 2 m.-large onion(s), red
  • 3 garlic cloves
  • 4 tbsp olive oil
  • 3 small apples, sour, cut into cubes
  • 2 tbsp lemon juice
  • 2 ½ tbsp curry powder
  • 2 tsp sea salt
  • 3 kiwi(s), cut into cubes
  • chili powder
  • Coriander powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Bring the lentils to a boil with water and bay leaves. Simmer over low heat for 25-40 minutes. In the meantime, let the raisins soak in the orange juice. Finely chop the onions and garlic and sauté in the oil until translucent. Add the diced apple and sauté briefly. Add the raisins and orange juice, the apple and onion mixture, and the diced kiwi to the cooked lentils. Season with lemon juice, curry powder, and sea salt. For a spicier flavor, add chili powder and ground coriander.
