Fruity meringue slices

Ingredients for 4 servings:

  • 1 egg white
  • 40 g sugar
  • 1 pinch of salt
  • 1 egg yolk
  • 25 g sugar
  • 20 g butter
  • 40 g flour
  • ½ tsp baking powder
  • 2 tbsp milk or orange juice
  • 10 g desiccated coconut
  • 5 g almond flakes
  • 150 g fruit (e.g. mango, raspberries) or of your choice
  • 20 ml orange juice
  • 10 g sugar
  • 5 g cornstarch
  • 80 g quark
  • 25 g sugar
  • 200 g whipped cream

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 40 minutes

for a mini baking pan approx. 17 x 17 cm

Beat the egg whites with salt until stiff, gradually adding the sugar. Beat the butter and sugar until creamy. Briefly mix in the egg yolks on the lowest speed. Sift the flour and baking powder over the mixture and briefly mix in the milk or orange juice. Spread into a mini baking dish (approx. 17 x 17 cm) lined with baking paper. Spread the beaten egg whites on top and sprinkle with the desiccated coconut and flaked almonds. Bake in a preheated oven at 160°C (convection oven) for approx. 20 minutes on the middle rack. Allow to cool, then cut in half horizontally to create two sheets. Roughly mash the fruit with a fork. Bring 100g of this to a boil with the sugar. Mix the cornstarch with the juice until smooth and add to the fruit mixture. Bring back to a boil, stirring constantly, until the mixture thickens. Allow to cool, stirring occasionally. Spread the fruit mixture onto the sheet without the meringue and arrange the remaining fruit on top. Cut the other meringue sheet into four pieces. Whip the cream with 15g of sugar until stiff. Mix the quark with 10g of sugar. Fold 70g of the cream into the quark. Spread the cream over the fruit filling and cover with the four pieces of the remaining pastry sheet. Refrigerate for a few hours. When the remaining cream has firmed up a bit, whisk it again until smooth, then spread it over the edge and smooth it out. Approx. 300 kcal per serving based on 4 pieces. For a 30cm x 40cm baking sheet, multiply the ingredients by 4.
