Ingredients for 1 servings:

  • 2 kg orange(s), organic
  • 300 ml orange juice
  • Orange peel, zest
  • 1 piece(s) ginger, about the size of a walnut
  • 2 tbsp sugar
  • 1 kg gelling sugar, 2:1

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

with ginger, not bitter

Wash the oranges, remove 2 or 3 zests, and set aside. Peel the ginger and finely dice. Carefully peel and dice the oranges; this yields about 1.5 kg of prepared pulp. Place the orange cubes and orange juice in a sufficiently large saucepan; the total mass should be about 1800 g. Mix with the 2 tablespoons of sugar. Simmer for about 5 minutes, then roughly puree. Then add the gelling sugar, zest, and ginger and cook for 4 minutes (or according to the gelling sugar instructions). Pour hot into prepared jars. Makes about 6 jars of 450 ml each.
