Fruity rice salad

Ingredients for 4 servings:

  • 200 g peas, frozen
  • 160 g rice
  • 4 slices of pineapple
  • 1 can tuna, in its own juice
  • 1 small onion(s)
  • 1 tbsp vinegar
  • 4 tbsp pineapple juice
  • 4 tbsp oil
  • salt and pepper
  • Parsley
  • sugar and curry powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, cook the rice in salted water and let it cool (Kuko rice is best). Meanwhile, cook the frozen peas in lightly salted water and let it cool. Then cut the pineapple slices into small pieces, as well as the tuna. Finely chop the onion. Then make a marinade with oil, vinegar, pineapple juice, salt, pepper, sugar, parsley, and plenty of curry powder. Mix it with the remaining ingredients (rice, peas, pineapple, tuna) and let it sit. Either eat as is or serve with a baguette.
