Ingredients

  • 2,5 Handful Arugula
  • 2 Clementines
  • 2 Dates
  • 3 Cocktail vine tomatoes
  • 1 Baby peppers
  • 1 Shallot
  • 60 g Cheese (any)
  • Oregano leaves
  • .

dressing

  • 0,5 tablespoon Ground Tigernuts
  • Alternatively hazelnuts
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon Balsamic date
  • Salt and pepper

Instructions

  • Place the washed rocket on a plate.
  • Peel and chop the clementines. Cut the tomatoes into slices. Cut the bell pepper and shallot into rings. Core the dates (they were large) and cut into small pieces. Add these ingredients to the rocket. Cut the cheese (I had wildflower cheese) into thin slices and add to the salad as well.

  • Mix the ingredients for the dressing.

  • Pour the dressing and oregano leaves over the salad. Possibly season with a little salt and pepper.
