Fruity salad with scamorza

Ingredients for 2 servings:

  • 1 lettuce(s)
  • 1 handful of pineapple pieces, fresh
  • 150 g scamorza
  • 2 tbsp olive oil
  • 2 tbsp Crema di Balsamic vinegar
  • 1 pinch of salt
  • ½ handful of barberries
  • 1 pinch(s) red chili flakes, smoked (Chipotle)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Wash the lettuce, tear it into pieces, and place it in a bowl. Peel the pineapple and cut a handful into bite-sized pieces. Cut the cheese into small pieces. Mix a dressing of olive oil, balsamic vinegar, and salt and mix it into the salad. Arrange on a plate, place the pineapple pieces on top, and place the cheese pieces in the center. Roast the barberries and chili flakes in a dry pan until fragrant. Sprinkle over the cheese and serve. Approx. 300 kcal per serving.
